Dr. Livingston uses all British ingredients, I presume. A beautifully traditional balance of the finest British malt and hops. Aromas of caramel malty sweetness and floral, earthy hops. Slight toffee notes complement nutty, bready, and caramel flavors, carried away by a moderate hop bitterness. Heritage Chevallier base malt, and Simpsons Crystal malt, as well as Simpsons T50 and DRC character malts. East Kent Golding hops and London Ale Yeast. Cheerio ladies and gents, bottoms up!

We built Sonic Boom to break barriers — hop barriers. This is the most hops we’ve ever put into a beer, clocked at an earth-shattering 9 pounds per barrel of Riwaka, Mosaic, Simcoe, and Citra hops, cryogenically concentrated to reduce plant material and push the limits of terpene intensity like a shockwave to the face. Even though it’s TRIPLE dry hopped to the max and 10.5% ABV, our cutting-edge hopping techniques and brewing processes smooth the ride into something deceptively clean and dangerously drinkable. Share it with your copilot if you want, or drink it solo if you’re on a mission. Either way, you’re in for one hell of a trip.

No rest for the wicked. At the crack of dawn, when the lake is glass, it’s time to fire up the V-Drives for a rip. One prop, one speed – wide open. flat bottom sliding around turns. That’ll wake you up. Then it’s time for breakfast, and I’m not talking about flap jacks. This IPA screams grapefruit, white peach, kumquat, fresh young pine, and that clean crisp west coast bitterness from a boat load of Simcoe Cryo, and hand selected lots of Amarillo, Idaho 7, and Chinook that are torqued with killer terpene profiles. Flat bottoms for life.

We collaborated with our friends at IMBIB to brew an English Old Ale that we would rest in various retired spirit barrels at Schussboom. This expression of Ye Olde Eldridge Pope was aged in a 2 Fill Heaven Hill Bourbon Barrel. The grain bill consists of a rich, bready base of Simpsons Maris Otter and Golden Promise malts, Flaked Barley, and a blend of British Heritage Crystal, Double Roasted Crystal (DRC), and Carafa malts which lend complex layers of caramel, toffee, nuttiness, molasses, and dark fruit. Two different yeast strains were selected, from West Yorkshire and London, to push dark cherry esters and complement the complex malt character. We also performed a decoction with our state-of-the-art brewhouse, where a portion of the mash is boiled, to create melanoidins which are the pre-cursors to developing sherry and nutty notes in barrel aged beers.
