Not a controlled and regulated lager of the Rhineland, nor a spontaneously fermented lambic of the Senne River Valley, our American Wild Ale is equal parts planning and abandon. We turbid mashed and fermented Annie with a careful selection of wild yeasts and souring bacteria to give her the flavor profile we were looking for. Fermented and conditioned in our 30 bbl oak Foeder on 2000 lbs of blackberries, the culture mingled with the wild yeast on the blackberry skins to create a one of a kind beer. Bracingly tart, jammy, funky, fruity, oaky, and distinctly American.

Our company was built on the ingenuity of a homebrewer with a passion for experimentation and a deep appreciation for tradition. Near the end of 2018, we released our 1,000th batch of beer and our first hazy double IPA. Since we had such a great time with that beer, we decided we didn't need a fancy number like 1,000 to justify playing around with hops, malt, and yeast like we were homebrewing again. A yeast strain designed to maximize the amount of fruit forward flavors and aromas produces this double dry-hopped, hazy, blond, double IPA packed with Nectaron, Nelson Sauvin, and Columbus hops. Look for bright aromas and flavors of sweet tangerine, juicy pineapple, bright passion fruit, and honeyed peach bursting over a dank resinous backdrop

First we perform a cereal mash by boiling the milled blue corn to expose the starches. The resulting purple porridge is then mashed conventionally with barley malt causing the color to magically disappear and creating a super sweet, almost clear wort. The entire wort is boiled and we add enough Saaz hops for bittering without overwhelming the blue corn flavor. It’s then fermented with German lager yeast and lagered as normal. The resulting beer is refreshing on warm days, yet big for its style and with higher alcohol content than the classic American pilsner.

Iowa’s steady, well balanced nature is reflected in this IPA with its mix of medium body, lighter color and plenty of malt flavor to balance the massive hop impact. Citrusy and piney hops from the Pacific Northwest offset the robust malt flavor of the two-row barley and medium crystal malts.

Some people say you shouldn’t mess with a good thing... but those people probably don’t brew beer for a living. We tried a few small batch cask variations of our beloved Des Moines IPA and thought they were too good not to share! Keeping the same malt bill and kettle hops, we made our changes in the fermenter by using a different yeast strain and, in a major shift for this beer, we dry-hopped before fermentation was complete. Did we stop there? Of course not! We added a healthy second dry-hopping to the mix after fermentation. We removed some of the original varieties, but kept Centennial and Simcoe, while adding Citra to the mix. We hope you enjoy this fruitier, more mellow twist on an old favorite!

Already a hot fruity mess, our beloved Rock Dodger didn’t need any improvements, but that didn’t stop us from trying. We racked our double dry-hopped double IPA into rye whiskey barrels over a mound of diced mangos... and then we dry-hopped it again! The base beer has a blend of hops including Citra, El Dorado and Simcoe, resulting in a fruit-forward double IPA. The mangos further accentuate the existing tropical fruit flavors of the base beer and are balanced by the bracing heat from the rye barrels, creating an irresistible finish. The result is nothing short of magnificent. We hope you enjoy it as much as we do!

Meet Old Chungus–of Clan Chungus, of course–equal parts kind, wise, irascible, round, and downright adorable. When humans first began brewing beer, the science behind fermentation was not well understood and probably seemed a bit like magic. We now know that around 1000 AD in Goslar, lactic producing bacteria from the grain and air combined with the salinity of their local water source to help the brewers produce a tart, refreshing brew that we call Gose (GO-zuh). In conjuring up a plan for this beer, we honored that natural sort of magic by culturing lactobacillus organically from our grain to quickly sour a whole batch of beer. The resulting brew retains the magic of the original, with a citrus-like tartness and minerality that awakens and refreshes your palate with each sip.
